Slow Cooker Beef and Barley Stew

Let me begin with stating that I do not pretend to be a “good” cook. My goal is to feed my family with easy and healthy food that they will actually eat. I love slow cooking because I can prepare a meal in the morning and have it ready when my children are at their craziest… Dinner. It is so hard to try to prepare dinner with a preschooler and a toddler trying to get your attention.
So here ya go:

You will need

1 lb beef stew meat
1/2 cup barley
10 oz beef broth
4 bouillon cubes
2 cups chopped carrots
1 cup chopped celery
A handful chopped parsley
2 tsp salt
Pinch of basil
6 cups if water

Layer the chopped vegetables on the bottom if the crock pot. Add the barley, bouillon cubes, seasonings, beef broth and water. Do not stir…please.
Cook at medium/high heat for 6-8 hours. My crock pot seems to run hot so I will usually turn it down the last couple hours.

3 out of 4 members of my family love this stew. The member that does not enjoy the stew only enjoys cheese and animal crackers.
